101 Reasons to Move To Crescent City, CA: #17 - Fresh Albacore Tuna

In August and early September you can head down to the docks in Crescent City Harbor and purchase fresh tuna off of the fishing boats.  Many long time residents can enough tuna to last the entire year, and believe me, once you have had home canned Albacore Tuna, there's no going back to the junk you buy in the store.

So here's the recipe:

  • Fresh, filleted, Albacore Tuna cut into 2 x 2 inch chunks 
  • Marinate in Veri Veri Teriyaki marinade for at least 2 hours 
  • Wrap each chunk of tuna in a piece of bacon and poke a toothpick through the chunk to hold the bacon in place 
  • Pre-heat your barbecue, and grill until the tuna and bacon are done.  Don't overdue it or the tuna will dry out.

Serve with rice, (my husband likes Rice a Roni Wild Rice), a salad, some fruit, you''ll love it.
